- 600g lean beef
- 1 large onion
- 150g smoked bacon
- 2 tbsp oil
- 1 tomato
- 2 tsp Garlic cream
- 1 tsp Marjoram
- Freshly ground black pepper
- 2 tsp salt
- 100ml white wine
Preparation
Borsos tokány is a traditional Hungarian peppered beef stew. Start by cutting the meat into strips and dicing the smoked bacon. Peel and finely chop the onion. Fry the bacon bits in a splash of oil until crispy, then remove them from the pan. Sauté the onion in the remaining fat until golden brown. Add the strips of beef and sear them over high heat while stirring. Season the meat with salt, marjoram, and a generous amount of freshly ground black pepper. Deglaze the pan with the white wine and let it simmer briefly.
Wash the tomato and dice it. Add the tomato to the stew along with the garlic cream and the crispy bacon bits. Add a splash of water and continue to simmer on low heat. The borsos tokány is ready once the sauce is thick, dark brown, and bold in flavor.
Borsos tokány is delicious when served with galuska (dumplings), tarhonya, or rice. In Hungary, there are countless variations of this dish, feel free to be creative with other additions and ingredients!
